Not only as a scientist but as a mother, I\u2019ve been interested in health and traditional fermented food. During pandemic, I learned how to make variety of koji and koji fermented foods that inspired me a lot. Thanks to this opportunity, it turned out my one of grandmother\u2019s family was koji maker and another grandmother\u2019s family was soy sauce maker and I couldn\u2019t stop feeling my spirit was thrilled. My family also loves fermented koji food, especially miso soup. They are always happy to eat my miso, saying it is delicious! I\u2019m a mother of two children and a registered home economics teacher in Japan. I love people, food, cooking, studying, teaching and especially, doing something different from others! I love the rural towns although I was born and raised in the capital city of Tokyo.
