There’s nothing to worry about, is there? I’ve been thinking that there’s nothing to worry about, but contrary to my feelings, the world seems to be getting dyed by itself.

The day after tomorrow is the day of preparation. Are you ready for it?
Today, I’d like to explain the procedure for the day after tomorrow.
The procedure is quite simple.
Steam the glutinous rice that has been soaked in water.
- Mix the sake and the cooled glutinous rice in a bowl.
- Finally, add koji and mix further.

Let’s take care of a few things in this process.
- When steaming the glutinous rice
Soak the glutinous rice at least overnight, 12 hours or more, 24 hours is perfect.

Place a cloth inside the steamer and place the rice on it to steam. If you don’t understand or want some advice, let me know!
Be careful not to let the water in the #pot evaporate and burn it dry.
It is best to use a pot that can hold enough water, but if you don’t have one, keep a pot of boiling water next to it and add hot water each time.
If not, prepare a pot of boiling water next to you and add water as needed. Make sure that the boiling water does not touch the glutinous rice wrapped in the cloth. Don’t let it turn into sticky rice. Steaming means that the rice will be hard. 2.
In a bowl, mix the sake with the cooled glutinous rice.
The glutinous rice right after #steaming is quite hot, so let it cool down to some extent before proceeding (the enzymes will die if it’s hot). However, it’s still hot, isn’t it? If it’s still hot, you can add some sake. The sake will cool down the steamed glutinous rice and bring it to a good temperature for adding koji.
- Add koji at the end and mix further.
When the temperature is about the same as a #bath (about 40 degrees Celsius), add the koji and stir well.
I don’t have a thermometer, I don’t know what 40 degrees Celsius is! If you don’t have a thermometer, you know what lukewarm water is. It’s less than 40 degrees Celsius. If it’s so hot that you have to take your finger out when you remember the temperature of the bath, it’s dangerous, but if it’s bearable, it’s probably okay. As long as you can feel it, you don’t need to buy a thermometer. By the way, it’s better to start warm than cold. It’s better to start out warm than cold. - Put the glutinous rice + koji + sake mix in a jar.
Mix in a clean bowl. Once it’s well mixed, you can pack it in the bottle.
After filling the bottle, label it.
Write down today’s date, the ratio and the amount you made. It will be a long fermentation, so it will come in handy later. Also what kind of alcohol you used. You can also add sayings such as “May it taste good” or “Thank you” ~. Put your hands on the bottle and let it fill with the delicious energy of gratitude.
You can tighten the #lid tightly. (Oh, of course it’s okay if it’s a little loose.) He’s not an overtly active guy by the looks of it, so you don’t need to worry about the air so much.
And let the usual words appear.
‘Cleanliness is the first requirement.
Wash your hands before working.
All tools and containers are washed with water without soap. (If they are absurdly dirty, wash them with soap.)
Disinfecting with vodka, like you do with miso, is not necessary. You don’t need to disinfect the vodka like you do with miso, because you’re going to brew it with vodka (or vodka equivalent percentages of alcohol).
